Making pies, cookies and other baked treats for the holidays is a festive tradition but can also quickly become a lot of work. Make and vacuum seal your treats ahead of time to take the worry out of holiday baking. Vacuum sealing backed goods or doughs will stay fresh whether you are mailing them to relatives, saving for a holiday party, or just keeping them for yourself! So here are a few ways to save them.
Fruit Pies - There are a few different methods for freezing fruit pies. One being vacuum sealing and freezing crust dough and fruit filling separately. This option allows some of the prep work to be completed ahead of time. A second method is to make a pie up to the point it’s ready for the oven. Vacuum seal and freeze it. When it is time for pie, thaw in the fridge, and bake. Lastly, a third option is to bake the pie fully before vacuum sealing and freezing. Pull the pie out the day before and let it thaw in the fridge. (Note: this option can soften pie crust)
Dough - For most cookies like sugar or chocolate chip cookies, combine all the ingredients, then use a melon scooper or cut into shapes to portion the dough. Space the dough balls or cutouts on a cookie sheet just like you were about to bake them in the oven. We recommend flattening dough balls slightly. Put the sheet in a freezer until frozen solid. Remove the frozen dough pieces from the sheet and place into EcoVac vacuum sealer bags or chamber sealer bags, spaced out evenly. Seal the bags with your sealing machine and store in the freezer until you are ready to bake or eat. Seal your dough as well to maintain freshness.
Baked Goods - Vacuum sealing and freezing baked goods is another way to easily store your sweets for the season. This is a particularly desirable method if you've prepared a large batch of baked goods, as you can keep some on the counter for guests while the rest remain in your freezer. Separate your bake goods into small groups, then use your vacuum sealer to remove the air, which will extend the freshness of your treats. Storing them in small batches makes the thawing process easier, as you can choose a set number of treats to thaw whenever you want. However, some sweets, like brownies, are best kept in the original baking trays. Instead of slicing and storing. Keep the tray intact inside of the vacuum sealer bag to help preserve their texture of treats like brownies and bars.
